Garden cress (Lepidium sativum) is one of the fastest, most rewarding leafy crops you can put in an Egyptian garden or balcony pot. It is a cool-season annual with peppery, mustard-like leaves, and because it matures in only about 2-3 weeks it gives you something to harvest almost before any other crop has settled in. For beginners it is close to foolproof: the seeds germinate in just 2 to 7 days, often in under a week, so you see results fast and stay motivated. Garden cress loves cool, moist conditions and runs to flower (bolts) quickly in heat and long days, so timing matters in Egypt. The window is mid-August through December, with October and November the prime months. Egypt's mild winters, roughly 10-20 C from November to February, sit right in the crop's comfort zone, while hot summers cause premature bolting and poor quality. In the cooler, more humid Nile Delta the autumn-to-winter window is comfortably wide. In hotter Upper Egypt, favour the heart of winter (November to January) and avoid late-spring sowings that run into early heat. Garden cress tolerates most soils as long as they are moist and nutrient-rich, with loam preferred and an ideal pH around 6.0-6.7 (6.0-7.5 is acceptable). Choose a spot in full sun or partial shade. Sow the seed shallowly, only about 0.6-1.3 cm deep, and cover lightly: the seeds need light to germinate, so do not bury them. Keep the soil permanently moist and aim for a temperature of at least 15 C, with 15-20 C giving the fastest, most uniform emergence. Space rows about 7.5-10 cm apart. Cress is usually grown densely and not thinned; if you do thin it, leave plants about 20-30 cm apart for larger growth.
Because the growing period is so short, garden cress has only light-to-medium fertility needs. For an in-ground crop, a nutrient-rich soil is generally all it needs, with no heavy feeding required. Container plantings benefit from periodic applications of a soluble (liquid) fertilizer during growth, since pots hold fewer nutrients and the cress draws on them quickly while it races to harvest.
The single most important thing is moisture. Garden cress needs relatively moist soil and cool conditions, and it performs best when the soil stays very moist. Drought stress significantly reduces your yield, so water frequently; container plantings usually need watering every few days. Keep an eye out for flea beetles (Phyllotreta spp.), the main insect pest, which chew small holes in the leaves. The main diseases are damping-off (which rots seedlings), downy mildew, Alternaria leaf spot, clubroot, blackleg, and bacterial black rot. Most of these are kept in check by good airflow, clean soil, and avoiding waterlogging, so water enough to keep the soil moist without leaving it soggy.
This is the fun part, and it comes quickly. Harvest can begin about 2-3 weeks after emergence, with different cultivars maturing in 10-40 days. Pick young leaves once they are about 5 cm long. To keep the plant producing, remove the older outer leaves for use while leaving the young central growth in place. Alternatively, cut the whole plant before the flower (seed) stalks form, while the leaves are still tender and mild. Harvesting before bolting is the key to the best peppery flavour and texture.
