Natural honey is the sweet substance that honeybees make from flower nectar, store in the comb, and ripen until most of its water has evaporated. Real, raw honey is simply that — nectar transformed by bees — with nothing added and as little processing as possible. Because honey is naturally energy-dense and pleasantly sweet, it is a handy way to add flavour to a healthy plate. Telling real honey from blended or watered-down products takes a little attention. A few practical pointers:
Store honey in a tightly sealed glass jar, away from direct sunlight and away from the stove, at normal room temperature — there is no need to refrigerate it, and cold actually speeds up crystallisation. Always use a clean, dry spoon, since drops of water inside the jar can affect the honey over time. If your honey crystallises during a cool Egyptian winter, simply stand the jar in warm (not boiling) water until it softens. A note for families: honey is not recommended for babies under one year old.
