Sweet marjoram (Origanum majorana) stands apart from coarser oregano with its gentle, sweet warmth and a faint citrus lift. Its soft, oval grey-green leaves carry a delicate fragrance that suits everything from slow-cooked stews and roasts to fresh dressings, herb butters and seasoning blends. Compact and tidy, it also earns a place as a fragrant ornamental edging.

Planting

In Egypt, sow in autumn — roughly late September through October in the Nile Delta — and grow through the mild winter, since marjoram is frost-tender and establishes poorly in extreme heat. Start seeds indoors about 6 to 8 weeks before the last frost in cooler areas, scattering the tiny seeds thinly on moist compost; they need light, so do not cover them. They germinate at around 20°C, with seedlings appearing in about 1 to 3 weeks. Transplant once seedlings reach roughly 13 to 15 cm tall and frost danger has passed, spacing plants at least 20 cm apart in full sun (6 or more hours daily) and well-drained, neutral to alkaline soil.

Fertilizing

Marjoram is not a heavy feeder. Work well-rotted compost into the soil before planting, and plants in the ground generally need no extra feeding. Container-grown plants benefit from a sprinkling of general-purpose granular feed in late spring or early summer after their first year.

Care

Keep the soil evenly moist while plants establish, never waterlogged, as poor drainage causes root rot. Once established, marjoram is notably drought-tolerant and needs only watering during dry spells. In very hot areas, give afternoon shade. Watch for aphids, spider mites and whiteflies, and for powdery mildew in humid conditions. Harvest leaves as needed — flavour and oil are best just before the tiny white to pale pink flowers open; pinch off flower buds to prolong leaf production.
