Tiger nut, known in Egypt as حب العزيز, is one of the oldest cultivated crops of the Nile Valley. This sedge (Cyperus esculentus var. sativus) is grown for the small, wrinkled underground tubers that carry a sweet, mildly nutty, almond-like flavour. Crisp when fresh and chewy when dried, they are enjoyed as a snack, soaked for a creamy plant-based milk, or ground into desserts. The grassy clumps also make an attractive, low-maintenance edible patch.

Planting

Plant the tubers in spring once the soil is warm, from the first half of April through May. Pre-soak them overnight in lukewarm water for even sprouting. Set them about 8 cm deep on irrigation ridges spaced around 60 cm apart, leaving 15-20 cm between tubers; for container or home sowing cover with roughly 2 cm of soil. Choose a full-sun spot with loose, sandy, well-drained soil at pH 5.0-7.5. Sprouts emerge in about 2-3 weeks at 20-25°C. Avoid saline ground.

Fertilizing

This crop responds strongly to nitrogen. Mix a slow-release feed into the bed before planting and enrich the soil with compost or green manure during the fallow period. Feeding is most valuable during tuber expansion. Avoid over-fertilizing, which pushes leafy growth at the expense of tubers.

Care

Keep the soil consistently moist all season, irrigating about once a week, and mulch to slow drying through the hot summer. Tubers begin forming 6-8 weeks after emergence and bulk up through July-August, maturing at about 90-110 days. Harvest when the foliage yellows and dies back, usually November-December. Lift thoroughly, since stray tubers regrow and spread the next year.
