Butternut squash is a beloved winter squash prized for its smooth, tan, pear-shaped fruit and deep orange flesh. Its flavour is gently sweet with a distinctive nutty warmth that intensifies after curing, making it a favourite for roasting, velvety soups, and creamy purees. The thick, hard rind also stores well, so a single harvest can carry your kitchen through the cooler months.

Planting

In Egypt, treat this as a warm-season crop grown to avoid both frost and peak summer heat. In the Nile Delta, sow late January to March and again August to September; in hotter Upper Egypt favour an autumn sowing (August-September) and an early-spring sowing. Direct-sow seeds about 2.5 cm deep only once the soil at 5 cm depth has warmed to at least 18°C. To start indoors, sow on their side around 1.3 cm deep at a steady 18-21°C, then transplant about four weeks later once seedlings have 2-3 true leaves, hardening them off first. Space plants 60-90 cm apart with rows 1.5-2 m apart, in full sun with at least 6 hours of direct light daily.

Fertilizing

Apply phosphorus and potassium at planting according to a soil test. Once the vines begin to run, side-dress with a nitrogen source such as 27-3-3. For container plants, feed with a high-potassium liquid fertiliser every 10-14 days once the first fruits start to swell.

Care

Provide at least 2.5 cm of water per week, using drip or soaker irrigation onto the soil rather than the leaves to limit disease. Watch for squash bugs, vine borers and cucumber beetles, and protect seedlings from slugs and snails. Powdery mildew, anthracnose and grey mould are common, so keep airflow good and watering consistent. Harvest after 85-120 days when the rind is deep-coloured and too hard to pierce with a fingernail and the stem has dried; cut leaving about 5 cm of stem, before any hard frost.
