Local Jute is the authentic Egyptian molokhia, a leafy summer green treasured for its tender, glossy foliage and the signature silky, slightly thickening texture it gives to a classic cooked dish. Its mild, earthy flavour and soft green leaves make it the heart of a traditional molokhia pot, equally at home finely chopped fresh or simmered with garlic and coriander.
A hot-weather crop that will not germinate in cold soil, so sow directly once the soil and air are warm and settled at roughly 25-35 C; it tolerates up to 40-45 C. In the Delta sow from March to September (best in warm-humid March-April), on sandy soils February to November, and in Upper Egypt around Qena and Aswan from early November to mid-December. Soak seed in warm water for 12-24 hours, then sow shallowly about 0.3-0.5 cm deep in full sun. Seeds sprout in roughly 7-14 days at around 27 C. Thin plants to about 20-30 cm apart, or grow in rows 10-15 cm apart for cutting.
As a leaf crop it loves nitrogen. About 3-4 weeks after sowing, feed with ammonium sulfate plus superphosphate plus potassium sulfate. Home growers can apply a liquid nitrogen source such as fish or seaweed every four weeks. Avoid overdoing nitrogen, which coarsens both flavour and texture.
Keep the soil evenly moist but never waterlogged, giving about 5-8 cm of water weekly; in the field, irrigate twice at establishment then every 5-10 days. Watch for aphids, mealybugs, spider mites in dry spells, plus cotton leafworm, leafhoppers and cutworms. First cutting comes about 40-50 days after sowing; harvest the tender top 15-20 cm, taking 4-6 repeat cuttings. This frost-tender annual dies at the first cold snap.
